Ingredients for the tofu eggs:

  • 1 block firm tofu
  • 1 Tbs olive oil
  • 1 tbs nutrional yeast
  • 1 tsp black salt kala namak
  • ½ tsp turmeric
  • ¼ tsp black pepper

Ingredients for the scramble:

  • 1 small onion
  • 1 cup mushrooms of choice sliced
  • 1 red or green pepper
  • 1-2 cloves garlic minced


  1. In a medium mixing bowl break apart tofu into pieces with lots of chunks. Stir in the nutritional yeast, black salt, turmeric and black pepper. Set aside.
  2. Place a large skillet over medium heat; add the olive oil and sauté the onion, mushrooms, pepper and garlic until nicely brown. Fold in the tofu egg mixture. Stir everything together and cook for another 8 minutes.

  3. Remove from heat and season to taste with more kala namak if desired.

Recipe Notes

Serve with toast, avocado or on an English muffin!
